A What I Eat In A Day- Vegetarian Edition ~AD~

Something I’ve been loving on YouTube at the moment are what I eat in a day’s. I just find them so informative and it also gives me some new recipe ideas for when I am stuck on what to make. I thought it would be really fun to do one for myself and create a post all about what I eat in a day.

Before we start, I just wanted to give you a bit of information on my diet and my restrictions. I am vegetarian and I try to avoid dairy as much as I can as I am Lactose Intolerant. I am also a university student so I try to make my meals as affordable as possible! Additionally, I do not eat the same things every day, I sometimes eat a lot more than this and sometimes I will eat a lot less than this, this all depends on how I am feeling on the day. I am only writing this post to give people an insight into what I eat and it may also spark some new recipe ideas. This in no way shape or form is how anyone should eat, it’s just my personal preference! Now I’ve got all that out of the way, lets get onto breakfast!


Around a year ago I would never have breakfast as I just wasn’t a breakfast person but over the past year, I can’t go a day without having some sort of a breakfast. When it comes to breakfast I am never really fun with my ideas and I tend to have the same 2-3 breakfasts! I wish I was one of those people that loved Avocado on toast but I just don’t like avocado but I really wish I did!

For breakfast on this day, I just had some Wholewheat Cheerios with some Unsweetened Soy Milk with a side of Cucumber. This is a really simple meal but it keeps me full until lunch. I like to have a side of fruit for every breakfast as this just boosts my fruit intake and I like to change up what I have every week as I tend to get bored of the same food.


For lunch it all depends on what I have available. I like to change up what I have everyday but it honestly does just depend on what I am fancying that day. For this day in particular, I was in university so I wanted to create a really simple dinner that would keep me full into Dinner. On this day I had a jacket potato with beans with a side of vegetables. If you take anything from this post, you will find that I am a really fussy eater and I do like everything plain. I am that person that will customize my meal to have my burger plain. A jacket potato is probably my favorite dinner option as it is so filling but also really yummy.

Dinner is something I like to take my time on every evening after a long day, I find cooking really relaxing and putting together a dish that is really yummy is amazing. I also love to cook home made warm meals around this time of year as it definitely keeps me warm in the evenings! I have partnered up with Schwartz to show you a really simple warm meal.

So as I said earlier, I am vegetarian which means I don’t eat meat. Being vegetarian does not mean you can’t create amazing meals that we all know and love. A casserole is something I love to create and when I went vegetarian, it gave me more motivation to be creative with my food! The product that I’m going to be using for this dish is the Beef casserole mix that you can purchase from Tesco for only 85p or you can get 4 mixes for £2. Something I really love about these mixes is that it has recipes on the back of the product that you are able to follow but you can make amendments and substitutes to make the meal your own. For the substitute of beef, I used Tesco Meat Free Chicken style chunks which make a great alternative. Like it says on the back of the packet, I added some onion, carrots and some other veggies to a saucepan and mixed it in with with mix and left it to simmer for a couple hours and voila, it made such a beautiful meal and I had some left overs for the next couple of days!

I’d honestly give these mixes a 10/10 and they are suitable for vegetarians so whatever you choose, you can always make a yummy meal out of these, with or without meat. Another great thing about these are that they are actually 1 of your 5 a day per serving which is amazing. Also if you are like me and don’t like to experiment with food, these are amazing as they are packed with loads of herbs and spices that work really well together so all the hard work is done for you!
